BATATA-CAULIFLOWER-VATANA RASSA


This is a vegetarian meal which I make very often as it’s simple and delicious.

Here in this meal you will find that I have made a cauliflower and Potato vegetable which we call 

BATATA–FLOWER-VATANA RASSA BHAJI.

I add a little more tomatoes or tomato puree to this if I want it a little runny than seen in the picture. I have also served AMBAT VARAN with this meal and this is a dal preparation which is made by tempering soaked and cooked dal with mustard, jeera, curry leaves, hing and garnished with freshly chopped coriander.

BATATA-FLOWER CHA RASSA

INGREDIENTS:

2 medium sized potatoes cut into cubes
One medium sized cauliflower floret cut into pieces.
1/2 cup fresh peas or vatana
2 medium sized onions chopped
2 small tomatoes finely chopped
3 small cloves of garlic finely chopped
1 tsp dhania jeera powder
11/2 tsp red chili powder
1 tsp turmeric powder
½ tsp sugar

For tempering:

Oil, mustard seeds, jeera seeds, hing and one green chili.
Freshly chopped coriander for garnish.

METHOD:
  1. 1.     Heat oil and add mustard seeds let them crackle add jeera 
  2. 2.    Add the onions, and garlic, when it becomes a little brown add the tomatoes, cook till the tomato pieces are cooked and soft.
  3. 3.    Add potatoes and a little water let them cook till the potatoes are partially cooked
  4. 4.    Add the cauliflower florets and the green peas , chili powder , haldi powder , dhania jeera powder, sugar and salt
  5. 5.    Let them cooked covered till cauliflower and potatoes are done
  6. 6.    Garnish with freshly chopped coriander.A simple vegetable which goes well with any type of meal even a fishy type.

MORNING KITCHEN...

THIS IS HOW I FIND MY KITCHEN IN THE MORNING.


I love walking into my kitchen in the morning and finding all those colorful things that I keep on the counter , I have a very small kitchen  barely enough for 2 people to stand and cook , I like to be alone when I cook so that I can cook with concentration and not be distracted .

It’s a pleasure to see a clean and shining counter every morning and so I make it a point to really shine it the night before using dish washing soap, dish washing soap works really well on granite and leaves it shiny and clean.

Kitchen is one place in the whole house where I spend most of my productive time and so as I always say it’s the little things that make your day, I have many things that I love looking at on the counter and on the kitchen shelves , off course it does get a bit congested but I feel what’s the use of those things that I buy with great pleasure , if they lie inside the cupboards unused and not serving its purpose.

Thats my kitchen for you... small but enough to give me pleasure.

HOMEMADE VEGETARIAN MEALS ...

Friends, 
It’s been a very long time since we have communicated with each other. I used to take a lot of pictures and make lots of dishes to share with you and it so happened that my regular camera with which I was comfortable with ,would not work as expected and that put me a little back my regular posting of recipes.


But it’s been a long time and I really miss blogging a lot and so I have decided that I will be sharing my daily meals which I click with my mobile.
If you read my other blog where I have all my traditional Goan recipes you will find that I will be posting my daily homemade food thali's too but only those which have a non-veg component.

Here I will share my day to day lunches which are totally homemade and made from scratch , I prefer to bring vegetables from the vegetable seller and cut chop at home and make my meals no store bought pastes or frozen stuff for me. especially for my daily meals . Off course if we do have a big party one has to take the help of these ready things to ease the planning and cooking process.
I can also share recipes with you if request them in the comments section.

I try my best to click pictures of my day to day meals regularly so that it’s of help to those who are confused as to what to cook for the day. 
 My menu is always made taking into consideration the type of food I make i.e. I make a light vegetable if I make a spicy dal or fish curry ,
or if I make plain non- spicy dal I will always make a nice spicy vegetable and fry something to go with it. So I hope that those of you who are looking out for combinations while cooking their meals will be benefited.



This is a simplest vegetable meal on can prepare the work is cutting and chopping the spinach , but in the US one can get already chopped spinach which is a boon, here in India we have to buy, clean and chop it and so those in the US you can make this in an instant.

Menu:

Spinach-lentil curry or palak whole masoor curry
Easy stir-fried potatoes.
Roti and I served plain dal which is not in the picture.
An easy and nutritious meal for your family if you are short of time and still want to put something good on the plate.

TANGY SWEET EGGS....

This is a quick dish for which the time taken is only that for boiling eggs.

METHOD WITH INGREDIENTS

This is a spicy tangy dish which is very versatile can be eaten as a sandwich, as a wrap or on its own. YUM!!
Boil some eggs.. I will say 2 which are enough for one person.

Add the following ingredients to it.

1 small onion finely chopped
1 small tomato finely chopped
1 tsp tamarind pulp
1 tbsp tomato ketchup
1 tsp chaat masala
½ tsp jeera powder
Lots of finely chopped coriander leaves
And a dash of freshly squeezed lemon juice.

Mix all the above ingredients in a bowl add salt to taste and finely add your coarsely chopped boiled eggs

Here you can control the amount of egg yolk you can add for those who are not allowed to eat the yolk can only use the egg whites while kids can enjoy the whole egg ..

For added taste smear a little bit of freshly made coriander chutney to your bun or roti before adding the mixture to make a wrap or a sandwich.

VEGETARIAN THALI..


Here you can see a vegetarian thali made at home
It has Palak Rassa bhaji, chickpea salad with spices and raw onion, beet root salad with yoghurt , dal or varan as we call it and potato fritters which add more of a taste to the varan rice combination then nutrition.
I also made rice which is not in the picture.
